Yeast strain optimised for WhiskyThe Alcotec Whisky yeast contains a yeast strain we chose for its ability to retain some of the original qualities of the wash. This is important in Whisky production as the last thing you want is a turbo yeast of the "Pure" type which would leave nothing of the Whisky taste left. It is of course important to get the right strain so we retain and enhance the right flavours but suppress the off-flavours. We are pleased with the result here. This yeast is obviously NOT for use with a sugar/water mix as there would be nothing to retain, it's for fermenations of grains, molasses etc for distilling into Whisky. Enzyme for breaking down starchWhen you work with grains and other starchy raw materials, the yeast often gets into trouble towards the late part of fermentation as the starches are not fermentable. However they don't contribute to the taste, so we would like to use them up into more alcohol. This is where the enzyme (amylo-glucosidase) comes in. It converts the starches into fermentable sugars so the yeast can do its job and provice good quality alcohol. |
Alcotec Whisky Yeast
Making whisky takes some really good ingredients. It starts with the water of course, we can't help you there. But then it's the yeast. Whatever your raw material - molasses, grains, malt etc - you will need a very high quality yeast to produce the best possible Whisky wash (for distilling into Whisky, where legal of course).
